Let’s make a crispy and juicy Korean Shrimp Burger today!
This burger was inspired by the Wasabi Shrimp Burger from a famous burger restaurant in Korea that I was craving. I decided to recreate it at home and it turned out to be super easy to make! The burger has a special wasabi mayo that pairs perfectly with the shrimp. Today, I’m sharing the secret recipe with you!

The Secret to the Crispy Shrimp Patty
The shrimp patty is crispy because, like tonkatsu, it’s coated in panko and fried.
To hold its shape and make it even crispier, I kept the patties cold in the freezer before coating them in batter. The batter I’m sharing today is the same one used in tonkatsu restaurants. You don’t need to dip the patty in flour and egg separately. This batter sticks perfectly to the patty and doesn’t fall off during frying. It’s also great for tonkatsu! This Korean-style giant tonkatsu recipe is super crispy and the homemade sauce is perfect, so you might fall in love with it!

The Appeal of the Shrimp Patty

The shrimp patty is crispy on the outside and juicy on the inside, with shrimp that burst with texture in every bite. The secret to this patty is that half of the shrimp is finely chopped and the other half is coarsely chopped to maintain that satisfying shrimp texture. The starch also adds a chewy texture. The Specialness of Wasabi Mayo

The sweet and tangy wasabi mayo helps cut through the richness of the shrimp and is the highlight of this burger. It’s super easy to make, but has that exotic, upscale restaurant flavor. This sauce would also be amazing on fried chicken!

As with other burgers, fries and a coke would be great, but this shrimp patty is already pretty big, so you’ll be full enough without needing extra sides. If you have leftover tatar cabbage salad, it pairs perfectly with the burger!

Easy Shrimp Burger Recipe at Home

In Belgium and Europe it’s really hard to find a shrimp burger. I haven’t seen any restaurants with crispy shrimp patties and wasabi mayo like the ones I love. As a Korean who misses the taste of home, I decided to make it myself, and it turned out to be so easy! Plus, I was able to add more shrimp to my burger, which was a great bonus. Korean Shrimp Burger
Equipment
- 1 Frying pan
- 1 thermometer (helpful to check the oil temperature)
- 1 Cutting board & knife
- 3 mixing bowls
- paper towels
- 1 Spoon
Ingredients
- 300 g frozen shrimp
- 2 burger buns
- 10 g parsley
- 4 pcs pickles
- 1/2 red onion
- 1/4 onion
- 1/4 cabbage
Wasabi Mayo
- 1 tbsp wasabi
- 6 tbsp mayonnaise
- 1 tbsp sugar
- 0.5 tbsp vinegar
- 0.5 tbsp lemon juice
- 2 pinch dried parsley
Instructions
Prepare the Shrimp Patty
- Remove the shell, tail and any internal organs from the shrimp.
- Chop half of the shrimp into large pieces and the other half into fine pieces.
- Season chopped shrimp with salt and pepper.
- Finely chop 1/4 of an onion.
- Mix shrimp, finely chopped onion, and 1.5T starch.
- Shape into thick patties and freeze for 20 minutes.
Prepare Vegetables & Sauce
- Thinly slice the red onion.
- Shred the cabbage.
- Finely chop the parsley.
- Mix cabbage and parsley with tartar sauce.
Make Wasabi Mayo
- Mix 1T wasabi, 6T mayonnaise, 1T sugar, 0.5T vinegar, 0.5T lemon juice, Parsley
Batter & Frying
- Make batter: 2eggs, 100g flour, 80g water, 0.5tsp salt
- Coat shrimp patties in batter.
- Coat the shrimp patty with panko.
- Fry the shrimp patty at 160–170°C until golden brown (about 6 minutes).
Assemble the Burger
- Toast burger buns with butter.
- Spread wasabi mayo on the bun.
- Place the pickles on top, then add the shrimp patty.
- Place the tartar cabbage salad on it.
- Add the red onion on it.
- Spread wasabi mayo on the burger bun and place it on top of the burger.
