Today, let’s make a delicious soy sauce Korean noodles in just 10 minutes! We call it Soy Sauce Bibim Noodles (Ganjang Bibim Guksu 간장비빔국수). The sweet and salty combination is bursting with umami, and since it’s not spicy, it’s a perfect dish for babies!

What is Soy Sauce Korean Noodles?

Soy sauce Bibim Guksu (Ganjang bibim guksu 간장비빔국수) is a dish in which noodles are mixed with a seasoning made mainly of soy sauce. It’s usually made with somyeon (thin noodles) or jungmyun (medium noodles) and served cold. The soy sauce seasoning is enhanced with sesame oil or perilla oil, which adds a rich, savory flavor. This dish is perfect for those who can’t eat spicy food, and it’s also very popular with children.

The secret to perfect noodles?

For bibim-guksu, it’s really important to cook the noodles just right to make them chewy. Let me tell you the secret to making your noodles taste amazing! No need to time it!

Bring the water to a boil and add your somyeon (thin noodles) or jung-myeon (medium noodles). When the water starts to bubble, add some cold water. This will make the foam disappear. Continue boiling. When the water starts bubbling again, turn off the heat. Drain the pasta and rinse with cold water. Be sure to rinse thoroughly to remove the starch, which makes the pasta extra chewy.

Main Ingredients

The main ingredients are soy sauce, noodles (somyeon or jungmyun) and sugar. Adding sesame oil or perilla oil enhances the flavor. There are various types of soy sauce, but today, for the noodles, I’ll be using Jin Gangang. 진간장

Childhood Food Memories

Do you have a special childhood food memory? When I was little, there was something called ‘Aegi Guksu’ 애기국수 (Baby Noodles) at a noodle restaurants in Korea. It wasn’t on the official menu, but the restaurants’ owners would often serve it to children who couldn’t handle hot or spicy food, and they’d even give it to us for free as a kind gesture. That’s what Aegi Guksu 애기국수 is.

I must have been around 5 years old at the time, and I still remember how happy I was to receive it and how much I enjoyed eating it. Even though it’s a simple dish, it holds a special place in my heart because of that memory. I’m grateful for the love and care from the adults back then, which helped me grow up feeling so loved and happy. I hope I can be that kind of adult for children too.

  • 1 Fry Pan
  • 1 Spatula
  • 1 Strainer
  • 1 Tbsp
  • 1 tsp

Ingredients
  

  • 100 g Somyeon(Korean wheat noodles) Thin wheat noodles are fine
  • 1 Tbsp Soy sauce
  • 1.5 Tbsp Oyster sauce
  • 1 Tbsp Sugar
  • 1 Tbsp Sesame oil
  • 1 Egg
  • 1.5 tsp Sesame seeds for sprinkling on top

Instructions
 

Boil the noodles

  • Boil water

  • Cook one serving of noodles.

  • Rinse the noodles in cold water and set aside.

Make the sauce

  • Mix them all:
    – 1 Tbsp soy sauce
    – 1.5 Tbsp oyster sauce
    – 1 Tbsp sugar
    – 1 Tbsp sesame oil.

  • Add the sauce to the noodles

  • Top the noodles with a fried egg.
